For centuries, the seeds of Star ANISE have been chewed in small quantities after each meal to sweeten the breath. The Japanese plant this tree in their temples and on tombs, and use the pounded bark as incense. Homeopaths prepare tinctures from the seeds.

ANISE is in the Magnolia family; its leaves and axillary flowers are yellow and has a licorice-like smell. The fruits are harvested before they ripen, then sun dried. It is, as the name suggests, star shaped, radiating between five and ten pointed boat-shaped sections, about eight on average. These hard sections are seedpods. Tough skinned and rust colored, they measure up to 3cm (1-1/4”) long.

ANISE is used to flavor Middle Eastern arak, Colombian aguardiente, French spirits, anisette and pastis, Greek ouzo, Bulgarian mastika, German Jägermeister, Italian sambuca, Dutch Brokmöpke, Portuguese, Peruvian and Spanish anís, Mexican Xtabentún and Turkish rakı. In these beverages, it is clear, but on addition of water becomes cloudy, a phenomenon known as the ouzo effect. It is believed to be one of the secret ingredients in the French liqueur Chartreuse. It is also used in some root beverages, such as Virgil's in the United States.

Perfumery/Aromatherapy:

In Aromatherapy, use to add a warm, moist scent to any blend.

Anise star is generally non-toxic and non-irritating and should not be used by anyone who is allergic or has inflamed skin; is pregnant, nursing, or who has a serious medical condition such as endometriosis or other estrogen-dependent conditions.
